The chef has a long experience, born out of passion for cooking cultivated from early childhood, when little Emiliano Rossi flanked by his mother in the kitchen. He graduated from the institute hotel chef P. Artusi of Chianciano Terme (SI), alternating the studies extensive experience in various restaurants in the city of Cortona, until deciding, in 1994, just twenty-one, to start a restaurant business on their own . At first in small locations where there is now another proprietary activities "fett'unta" and then in the charming palace where it is now. Since then it creates tasty dishes, the result of the personal union of traditional Tuscan cuisine and personal inspiration. The idea behind all of Emiliano chef's culinary creations is the attainment of taste balance through a long trial. As a main dish of traditional Tuscan cuisine by the ingredient are searched the ingredient history, its past and its roots, only to be reinterpreted and updated. Thus new dishes, heirs of the long and rich Tuscan tradition, but lighter and more pleasant to the taste.
